No-Bake Gut Happy Pumpkin Parsley Bites (Peanut Butter and Egg–Free)
Ingredients:
1 cup plain canned pumpkin (not pie filling)
2 tbsp chopped fresh parsley (for fresh breath)
2 cups rolled oats (or oat flour)
1 tbsp ground flaxseed + 3 tbsp water (egg substitute)
Optional: 1–2 tsp coconut oil (for texture and healthy fats)
You can pulse the oats in a food processor if you want a finer texture, or leave them whole for crunchier bites.
Instructions:
1.Make the flax egg substitute: In a small bowl, mix ground flaxseed and water. Let sit for 5–10 minutes until it forms a gel.
2.Mix the dough: In a large bowl, combine pumpkin, parsley, flax gel, and coconut oil (if using).
3.Add oats: Stir in the oats gradually. The mixture should be thick and moldable — not too wet or sticky. (But our doggos are not picky 🙂)
4. Form the bites: Roll into small balls or press into silicone molds.
5. Set: Chill in the fridge for at least 1 hour to firm up.
Storage:
Freezer: Freeze for up to 2 months. Great for hot days — serve straight from freezer
